Here’s a recipe for an easy apple pie –

Bottomless Apple Pie

Filling

warm cinnamon applesauce (about 3 cups – recipe here or use your own homemade or store bought apple filling)

Pastry Dough

1 cup all-purpose flour

3 tablespoons sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

3 tablespoons butter

1 large egg

1 tablespoon cold water

Coating

3 tablespoons sugar

1 – 2 teaspoons cinnamon

Beginning with the pastry dough recipe, combine all the dry ingredients in a bowl and mix until well blended (can use food processor). Add butter and mix until well blended. Add egg and water and mix until the dough forms a ball. Place dough on a lightly floured surface and form into a disk; wrap in plastic and refrigerate. Refrigerate for a couple of hours or overnight. The dough can be used immediately after being mixed but it will be very soft and hard to form. When not using keep dough in refrigerator.

When ready to make pie, roll out dough and cut into strips. To make the coating, stir sugar and cinnamon together and toss the strips in the coating. Place strips on top of filling and pour leftover coating on top. Bake at 400º F for 15 to 18 minutes or until golden brown. Serve hot.

To make Bottomless Apple Pie spread filling in an 8×8 baking dish.

Next roll out the pastry dough so it’s the size of your baking dish. I just rolled the dough out, placed the baking dish on top of the dough and used a knife to trace the outline of the dish. Use a pizza cutter to cut strips. Keep your surface well floured because the dough can be become sticky.

Once the strips are cut toss the strips with the sugar-cinnamon coating. Place the coated strips on the apple filling. You can do a lattice crust but the filling cannot be hot because it can melt the strips.

I couldn’t do a lattice crust because my filling was still warm so I took the strips and tore them into smaller pieces and tossed the small strips onto the filling. Then sprinkle the leftover sugar-cinnamon on top.

Place dish in the oven at 400°F for 15-18 minutes or until golden brown. Serve hot.
