I never thought that with the influx of spring I would be craving pumpkin, which is generally a fall and winter vegetable. Pumpkin has such a rich flavor and velvety texture, it can be the perfect comfort food. While when I see this dessert I generally think of autumn leaves and cozy sweaters, this recipe is changing that for me. Pumpkin is a vegetable that can be enjoyed year-round and these pumpkin whoppie pies prove that.
